Dutch Corn Salad, also known as Mache or Lamb's Lettuce, is a small, herbaceous plant in the honeysuckle family that is eaten as a leafy green and an herb.


Once foraged by peasants across Europe, it is said to have been introduced to kitchen gardening by Jean-Baptiste de La Quintinie, the royal gardener to King Louis XIV of France.


Soft, tender that are oval shaped and dark green in color form small rosettes that have a mild, nutty flavor.


Nutrient dense and rich in beta-carotene, an antioxidant that turns into vitamin A in the body.
