Rau Muong Water Spinach, also known as Bamboo Leaf Water Spinach or Thai Morning Glory, is a leafy green vegetable native to Southeast Asia and a popular ingredient in Thai cuisine.
Plant grows to about 12 inches in height with long, thin, hollow stems and glossy, deep green leaves that resemble those found on a bamboo plant.
The stems are hollow with a crisp, tender texture and a grassy, slightly sweet flavor. The leaves are mildly sweet and earthy with a slight peppery bite that becomes more pronounced as the plant matures.
Can be eaten fresh in salads, stir-fries, curries, and soups, or pickled to use as a tangy, crunchy condiment. Also used in traditional medicine to reduce inflammation and aid in digestion.
